Abstract: Lamb production dominates in organic sheep production, while milk production is much less present and very rare. There are usually two basic systems of breeding in lamb production: fattening of lambs on pasture and combined fattening of lambs. In organic goat breeding, the most common is the organic production of milk and dairy products, primarily quality goat cheeses. The cultivation system is usually a combination of grazing (summer half of the year) and stable cultivation (winter half of the year). Such agriculture provides amortization of the negative effects of social development on the ecosphere and the human population as a whole.
